Probably the Seven Samurai edition you want to buy if you want to own the film

by

I won't go into plot details. You can read those online...
This film inspired two Westerns of the name "The Magnificent Seven." The 1960s Hollywood Western is by far the most popular of the "Mag Seven" movies. Kurosawa's film was also the inspiration for the anime series Samurai 7. Consider the anime and Westerns as homages rather than true remakes.
Now, why you may want to buy the Criterion release of Seven Samurai. They recently did a 60th anniversary remaster of Seven Samurai in Japan and it was controversial. A lot of people feel the contrast ratio in the 4K restored film is too dark in many scenes and that it loses details. This was after an exhaustive "rebuild" of the film from the best-quality copies from around the world... The original first-generation camera master negative is long gone, lost who knows when.
So, stick to your Criterion edition. It's cheaper than any Japanese edition and you can generally get it half-off if you're patient and wait for the sales.
